Bright, tangy, and beautifully ruby-red, this mocktail is the kind of drink that looks like it came from a fancy cocktail bar but comes together with just a handful of clean, simple ingredients. The homemade raspberry syrup is the real star — fresh berries, water, and maple syrup are simmered down into a rich, jewel-toned concentrate that's completely free of any added spices or hidden flavor enhancers. That matters more than you'd think, since many store-bought syrups and flavored mixers sneak in unexpected seasonings that can be a problem for anyone avoiding spices entirely. Fresh-squeezed lemon juice brings a natural brightness that balances the sweetness of the syrup without relying on anything processed or pre-blended. Topped with chilled sparkling water and served over ice, the result is fizzy, refreshing, and genuinely satisfying. It's a crowd-pleaser at brunches, baby showers, or any gathering where you want something that feels special without the stress of checking every label.

Combine the raspberries, water, and maple syrup in a small saucepan over medium heat. Cook, stirring occasionally and pressing the berries against the side of the pan with a spoon, until the raspberries have completely broken down and the liquid is deep red and slightly thickened, about 6–8 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a heatproof bowl or measuring cup, pressing firmly on the solids with the back of a spoon to extract as much syrup as possible. Discard the solids. Let the syrup cool to room temperature, about 20 minutes, or speed it up by setting the bowl over an ice bath.
