Homemade kombucha is one of those quietly magical kitchen projects ā a living, bubbling brew that transforms simple sweet tea into something tangy, lightly fizzy, and genuinely satisfying. This version keeps things beautifully stripped back, using nothing but black tea, sugar, filtered water, a SCOBY, and starter liquid, so there's zero risk of hidden spices, botanicals, or flavoring agents sneaking into your glass. That matters more than you might think, because many commercial kombuchas are loaded with ginger, pepper extracts, or exotic spice blends that can be hard to avoid when you're keeping things plain. Brewing your own puts you in complete control of every ingredient from start to finish. The process is mostly hands-off ā steep, cool, pour, and wait ā with just a daily taste test toward the end of fermentation to dial in your preferred level of tartness. The result is a clean, pale amber brew with a gentle effervescence and a pleasantly sour edge that feels refreshing without any heat or complexity you didn't ask for. Once you have your first batch going, you'll always have starter liquid and a healthy SCOBY ready for the next one, making this a self-sustaining ritual that's as practical as it is satisfying.
