Savory, sticky, and deeply aromatic, this roast pork loin is the kind of centerpiece that makes a weeknight dinner feel like a special occasion. The glaze is built from raw honey, coconut aminos, fresh garlic, grated ginger, and apple cider vinegar — bold, layered flavors with zero mustard in sight, which can be surprisingly hard to guarantee with store-bought marinades and sauces. Coconut aminos does a lot of heavy lifting here, delivering that savory depth you'd expect from a classic glaze without any of the usual condiment concerns. A double-layer glazing technique during roasting means the pork develops a gorgeous, caramelized crust that clings to every slice. Searing the loin first in coconut oil locks in the juices and gives you that golden exterior before the oven does its work. Resting the meat before slicing and finishing with the reserved glaze keeps everything tender and saucy all the way to the table. A scatter of fresh parsley at the end adds a pop of color and brightness that makes the whole dish look as good as it tastes.

Remove the pork loin from the refrigerator 30 minutes before cooking. Preheat the oven to 400°F (205°C).
In a small saucepan over medium-low heat, combine the honey, coconut aminos, minced garlic, grated ginger, apple cider vinegar, and 1/4 tsp turmeric. Stir and cook for 3–4 minutes, until the garlic is fragrant and the glaze has thickened slightly and coats the back of a spoon. Remove from heat and set aside. Reserve 2 tablespoons of the glaze in a separate small bowl to use as a finishing sauce after the pork is cooked.
