Rich, deeply savory, and built for slow cooking, this braised duck stew is the kind of meal that fills the whole kitchen with an aroma you won't want to leave. Duck legs are seared until the skin turns a deep, crackling gold before being nestled into a broth layered with smashed garlic, cremini mushrooms, sweet carrots, and a splash of pomegranate juice that gives the whole pot a subtle, fruity depth. Warm spices like turmeric and ginger round out the braising liquid in a way that feels both rustic and a little unexpected. Many prepared stews and spice blends sneak in mustard as a thickener or flavor booster, but every ingredient here is straightforward and easy to verify, so you can braise with total confidence. After nearly two hours on low heat, the duck meat falls away from the bone with zero resistance, soaking up every bit of that herb-scented broth. A handful of fresh parsley scattered over the top at the end keeps things bright and pulls the whole bowl together. This is the kind of deeply satisfying, cold-weather cooking that earns a permanent spot in your rotation.

Pat the duck legs thoroughly dry with paper towels and season all over with 1 tsp fine sea salt. Drying the skin is essential for a good sear — wet skin will steam rather than brown.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 7–9 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the flesh side for 3 minutes. Transfer the duck legs to a plate and pour off all but about 1 tbsp of the rendered fat, reserving the rest for another use.
