Few drinks hit the way a properly made cappuccino does — that balance of bold espresso, silky steamed milk, and thick, cloud-like foam is genuinely hard to beat. The good news is that this classic café staple is naturally free of mustard and any of its derivatives, so there's nothing to second-guess here. It's just two clean ingredients: finely ground espresso and cold whole milk, pulled together with a little technique and the right equipment. The real magic is in the steaming — keeping the wand near the surface to build volume first, then submerging to heat the milk to that sweet spot of 140–150°F, which gives you that glossy, smooth microfoam rather than a pile of airy bubbles. Tapping and swirling the pitcher before you pour is a small step that makes a big difference in texture. Pouring the liquid milk first and spooning the dense foam on top is what gives you those classic equal thirds that make a cappuccino feel like a proper treat rather than just a hot drink. Serve it immediately in a pre-warmed cup and it's genuinely as good as anything you'd order at a café counter.
