This sparkling mocktail is bright, fruity, and refreshing — the kind of drink that looks like it came from a fancy brunch spot but comes together in under fifteen minutes at home. A quick homemade berry syrup made from fresh or frozen berries, raw honey, and lemon juice forms the flavor base, and because every ingredient is whole and straightforward, there's nothing hidden to worry about. Spice-sensitive folks often have to skip flavored drinks and store-bought mixers that sneak in unexpected heat or aromatic blends, but this one keeps things beautifully clean. The syrup gets strained smooth before it ever meets the chilled kombucha, so you get a gorgeous, jewel-toned pour with zero grit or bitterness. Pouring the kombucha gently over ice keeps those bubbles alive, giving you that satisfying fizz in every sip. A few fresh mint leaves on top are optional but make it feel genuinely special — perfect for entertaining or just treating yourself on a slow afternoon.

Combine the berries, honey, lemon juice, and water in a small saucepan over medium heat. Cook, stirring and pressing the berries with the back of a spoon, until the berries have broken down and the mixture is syrupy, about 4–5 minutes.
Pour the berry mixture through a fine-mesh strainer set over a small bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. Let the berry syrup cool to room temperature, about 5 minutes.
