This vibrant mocktail is the kind of drink that looks like it came from a trendy café but comes together in your own kitchen with just a handful of real ingredients. A quick homemade berry syrup — made by simmering fresh or frozen berries with honey and lemon juice — gives the drink a deep, jewel-toned color and a naturally sweet-tart base that store-bought mixers simply can't match. Poured over ice and topped with chilled kombucha, the result is fizzy, fruity, and just a little tangy in the best possible way. Mustard has no business being in a drink, of course, but it has a sneaky way of showing up in flavored syrups and pre-made mixers, so making your own from scratch keeps everything clean and worry-free. The gentle fermented fizz of plain kombucha plays beautifully against the bright berry syrup without overpowering it. A few fresh mint leaves on top make it feel genuinely special, whether you're serving it at a weekend brunch or just treating yourself on a Tuesday afternoon.

Combine the berries, honey, lemon juice, and water in a small saucepan over medium heat. Cook, stirring and pressing the berries with the back of a spoon, until the berries have broken down and the mixture is syrupy, about 4–5 minutes.
Pour the berry mixture through a fine-mesh strainer set over a small bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. Let the berry syrup cool to room temperature, about 5 minutes.
