Duck stew is already the kind of dish that makes a kitchen smell incredible, and this version layers in tart apple, sweet potato, and earthy sage for something that feels genuinely special. The braising liquid — built from pomegranate juice, apple cider vinegar, and bone broth — turns deeply savory and slightly fruity as it cooks, soaking into every bite of fall-off-the-bone duck. For anyone navigating a mustard-free kitchen, this recipe is a natural fit: the depth of flavor comes entirely from aromatics, warming spices like turmeric and ginger, and the slow braise itself, with no condiments or spice blends that typically sneak mustard in. Starting with a hard sear on the duck legs is the move that makes everything else work — that golden, rendered skin adds richness to the whole pot. The Granny Smith apples go in toward the end so they stay tender without turning to mush, giving each bowl a bright contrast to the savory broth. It's the kind of stew that tastes like it took all day, even if your Dutch oven is doing most of the heavy lifting.

Pat the duck legs thoroughly dry with paper towels and season all over with 3/4 tsp of the salt.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3 minutes, until lightly browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered duck fat from the pot.
