Bright, tangy, and impossibly refreshing, this lemon sorbet is the kind of frozen dessert that makes you close your eyes on the first spoonful. It's built from just five clean ingredients โ sugar, water, lemon zest, fresh lemon juice, and a pinch of salt โ so there's nowhere for unwanted oils to hide. So many store-bought sorbets and frozen treats sneak in sunflower, canola, or other refined seed oils as carriers or emulsifiers, but this one skips all of that entirely by design. The technique is straightforward: a quick simple syrup, a strain, a chill, and a spin in the ice cream maker until the base turns pale, opaque, and perfectly scoopable. Pressing the plastic wrap directly against the surface before the final freeze is a small step that makes a big difference, keeping ice crystals at bay and the texture silky smooth. The result is a clean, intensely lemony sorbet that tastes like sunshine โ and you'll know exactly what went into every single bite.

Combine the sugar, water, and lemon zest in a small saucepan over medium heat, stirring until the sugar is fully dissolved, about 3โ4 minutes. Do not let the syrup boil vigorously โ remove it from the heat as soon as the sugar is clear.
Pour the syrup through a fine-mesh strainer into a bowl or large measuring cup, pressing on the zest to extract its oils, then discard the zest. Stir in the lemon juice and salt.
