Chicken thighs get a deep golden sear before simmering in a fragrant blend of curry powder, turmeric, cumin, and a touch of cayenne, all mellowed into a rich coconut milk and tomato sauce. Fresh ginger, garlic, and onion build layers of flavor from the base up, while a handful of wilted baby spinach adds color, nutrients, and a fresh finish right at the end. A squeeze of lime and a scatter of cilantro at the table brighten every bowl with acidity and herbal lift. Lean poultry, good-for-you fats, plenty of vegetables and warming spices — this one leans naturally into the kind of everyday, whole-food cooking that fits a Mediterranean-style plate. It's a satisfying, saucy dinner that spoons beautifully over rice or alongside crusty bread, and it reheats well for lunches through the week.

Pat the chicken pieces dry with paper towels and season all over with the salt and black pepper.
Heat the coconut oil in a large skillet or Dutch oven over medium-high heat until shimmering. Add the chicken in a single layer and sear, undisturbed, for 3–4 minutes until the undersides are golden and release easily from the pan. Flip and sear the second side for 2 minutes, then transfer the chicken to a plate — it will not be cooked through at this point.
