Preheat the oven to 400°F (205°C). Line a large baking sheet with parchment paper.
Halve each zucchini lengthwise. Using a spoon or melon baller, scoop out the flesh, leaving a 1/4-inch shell. Reserve the scooped flesh, roughly chop it, and set aside. Arrange the zucchini shells cut-side up on the prepared baking sheet, brush with 1 tbsp olive oil, and season with 1/2 tsp salt and 1/4 tsp black pepper.
