This hearty salad is built on chewy, nutty farro tossed with blistered cherry tomatoes, briny Kalamata olives, crisp cucumber, and tender quartered artichoke hearts — a texture-packed combination that eats like a warm-weather staple. The dressing does the real work here: a smooth blend of tahini, fresh lemon juice, extra virgin olive oil, and a generous hit of za'atar, turmeric, and cumin coats every bite in warm, earthy, citrusy flavor. Fresh parsley and torn mint fold in right at the end for brightness, while a scatter of pumpkin seeds adds crunch if you want it. Every component leans on whole grains, vegetables, olive oil, and herbs, which makes this an easy, satisfying pick for anyone building meals around a Mediterranean way of eating. Serve it at room temperature or slightly chilled, and it holds up beautifully as a make-ahead lunch or a side for grilled dishes throughout the week.

FIELD DAY OLIVE OIL EXTRA VIRGIN

Preheat the oven to 425°F (220°C). Combine the rinsed farro, 2 1/2 cups water, and 1/2 tsp salt in a medium saucepan and bring to a boil over high heat. Reduce the heat to low, cover, and simmer until the farro is tender and chewy with no hard center, 25–30 minutes. Drain any excess water, spread the farro on a rimmed baking sheet, and let it cool for 10 minutes.
While the farro cooks, toss the halved cherry tomatoes with 1 tbsp olive oil and 1/4 tsp salt on the rimmed baking sheet (or a second sheet if using simultaneously). Spread in a single layer and roast at 425°F (220°C) until the skins are blistered and the tomatoes are beginning to collapse, 15–18 minutes. Set aside to cool slightly.
