Add the chickpeas, avocado, tahini, lemon juice, 2 tbsp olive oil, garlic, za'atar, cumin, turmeric, and salt to a food processor. Process for about 1 minute, until the mixture is roughly combined.
With the processor running, add cold water 1 tbsp at a time until the hummus is smooth and creamy, with a consistency that holds a swirl but is easy to scoop — about 2–3 tbsp total. Scrape down the sides as needed, then process for another 30–60 seconds until completely smooth. Taste and adjust salt or lemon juice.
