Preheat the oven to 425°F (220°C). Pat the chickpeas dry with paper towels, spread them on a sheet pan, drizzle with 1 tsp olive oil, and sprinkle with 1/4 tsp salt. Roast for 20–25 minutes, shaking the pan halfway through, until the chickpeas are golden and crisp.
While the chickpeas roast, combine the za'atar, turmeric, cumin, 1/2 tsp salt, and black pepper in a small bowl. Pat the chicken thighs dry, then rub them all over with 1 tbsp of the olive oil followed by the spice mixture.
