Silky leeks are slowly softened in olive oil until sweet and tender, then bloomed with garlic, turmeric, and a whisper of ginger for warmth in every spoonful. Yukon Gold potatoes simmer right into the broth until they collapse into a creamy, velvety base once blended smooth — no cream required to get that luxurious texture. A bright squeeze of lemon juice at the end wakes up the whole pot, cutting through the richness and keeping it from tasting flat. Finished with a scatter of fresh chives and a final drizzle of good olive oil, it's the kind of soup that feels indulgent while staying totally simple. This one is a great fit for a dairy free table, comforting enough for a weeknight dinner and elegant enough to serve guests straight from the pot.

FIELD DAY OLIVE OIL EXTRA VIRGIN

Heat 3 tbsp olive oil in a large pot or Dutch oven over medium heat until shimmering. Add the leeks and 1/2 tsp salt, and cook, stirring occasionally, until softened and wilted, about 8–10 minutes.
Add the garlic, turmeric, black pepper, and ground ginger, and cook, stirring constantly, until fragrant, about 1 minute. Watch closely so the garlic does not brown.
