Heat 1 tbsp of the olive oil in a 12-inch skillet over medium-high heat until shimmering. Add the sweet potato cubes and a pinch of the salt, spreading them into a single layer. Cook, stirring every 2–3 minutes, until the cubes are golden on the outside and just tender when pierced with a fork, about 10–12 minutes. Transfer to a plate and set aside.
Add the remaining 1 tbsp olive oil to the same skillet over medium-high heat. Add the ground turkey and cook, breaking it into small pieces with a wooden spoon, until no pink remains and an instant-read thermometer inserted into the thickest portion reads 165°F (74°C), about 6–7 minutes. Transfer the cooked turkey to the plate with the sweet potatoes.
