Sweet potatoes, eggs, and a cast iron skillet are all you really need for a breakfast that feels both hearty and genuinely nourishing. The sweet potatoes get a proper sear in ghee until they're golden and caramelized at the edges, then come together with softened onion, red bell pepper, and a warm hit of smoked paprika and cumin. Eggs are nestled right into the hash and steamed to perfection under a lid, giving you runny or set yolks depending on your mood. Ghee replaces butter here, making it naturally dairy-free in the traditional sense while still delivering that rich, savory depth you want in a skillet meal. The whole thing is built from whole, minimally processed ingredients — no grains, no added sugars, no sneaky fillers — which is exactly what makes it so easy on your digestive system. Everything cooks in one pan, which means less cleanup and more time actually enjoying your morning. A little fresh parsley and a splash of hot sauce at the end bring it all to life.

Heat 1 tbsp of the ghee in a 12-inch cast iron skillet over medium-high heat until shimmering. Add the sweet potato cubes in a single layer and season with 1/2 tsp salt. Cook undisturbed for 5 minutes, until the undersides are golden brown, then stir and continue cooking for another 5–7 minutes, stirring occasionally, until the cubes are tender when pierced with a fork and browned on most sides. Transfer to a plate and set aside.
Reduce the heat to medium and add the remaining 1 tbsp ghee to the skillet. Add the onion and bell pepper and cook, stirring occasionally, until softened and the onion is translucent, about 5–6 minutes.
