Sweet potato hash with eggs is one of those one-pan breakfasts that feels indulgent but is built entirely from whole, recognizable ingredients. Caramelized sweet potato cubes get golden and tender in a cast iron skillet, then come together with sautéed onion, red bell pepper, and garlic for a deeply savory base. Smoked paprika and cumin do the heavy lifting on flavor here — no flavor packets, no seasoning blends with mystery additives, just real spices you can read and trust. Eggs are nestled right into the hash and cooked to a soft, runny yolk that breaks over everything like a sauce. Ghee replaces butter and keeps the whole dish clean and rich without any dairy concerns. It's the kind of meal that works just as well for a lazy weekend brunch as it does for a weeknight dinner when you need something satisfying fast. A little fresh parsley and a splash of compliant hot sauce on the side round it out beautifully.

Heat 1 tbsp of the ghee in a 12-inch cast iron skillet over medium-high heat until shimmering. Add the sweet potato cubes in a single layer and season with 1/2 tsp salt. Cook undisturbed for 5 minutes, until the undersides are golden brown, then stir and continue cooking for another 5–7 minutes, stirring occasionally, until the cubes are tender when pierced with a fork and browned on most sides. Transfer to a plate and set aside.
Reduce the heat to medium and add the remaining 1 tbsp ghee to the skillet. Add the onion and bell pepper and cook, stirring occasionally, until softened and the onion is translucent, about 5–6 minutes.
