Smoky, colorful, and genuinely satisfying, this cast iron breakfast hash brings together caramelized plantains, sweet bell pepper, wilted kale, and a bold spice blend that makes the whole kitchen smell incredible. The smoked paprika and cumin do the heavy lifting here, building deep, savory flavor without relying on any spices that fall outside a turmeric-free approach — every ingredient on this list is clean and straightforward. Plantains are the real star: seared until deeply golden in avocado oil, they develop a slightly crispy exterior with a tender, subtly sweet center that plays beautifully against the heat from the cayenne. The kale wilts right into the hash during the final minutes of cooking, adding color and a gentle earthiness that rounds everything out. A squeeze of fresh lime juice at the end brightens the whole pan and keeps the flavors lively rather than heavy. Topped with fried eggs cooked right in the same skillet, this is a one-pan meal that feels like a weekend treat but comes together with minimal cleanup. Whether you're following Whole30 or just looking for a hearty, nourishing breakfast that skips the usual inflammatory spice suspects, this hash delivers every single time.

Heat 1 tbsp of the avocado oil in a large (12-inch) cast iron skillet over medium-high heat until shimmering. Add the plantain cubes in a single layer and cook undisturbed for 3–4 minutes, until the undersides are deep golden brown. Flip and cook for another 2–3 minutes until golden on the second side. Transfer the plantains to a plate and set aside.
Reduce the heat to medium and add the remaining 1 tbsp avocado oil to the same skillet. Add the onion and bell pepper and cook, stirring occasionally, until softened and the onion is translucent, about 5–6 minutes.
