Smoky, colorful, and genuinely satisfying, this plantain breakfast hash is the kind of morning meal that makes you want to actually get out of bed. Caramelized plantain cubes get seared until deeply golden in a cast iron skillet, then tossed with smoked paprika, cumin, cayenne, wilted kale, and a bright hit of fresh lime juice — bold flavors that layer beautifully without a single drop of ginger anywhere in the mix. For anyone navigating a ginger sensitivity or intolerance, breakfast can be a surprisingly tricky meal, since warming spice blends and packaged seasonings often sneak it in. Here, every ingredient is straightforward and easy to verify, so you can cook with total confidence. The eggs — fried right in the same skillet — make it a complete, protein-packed plate with minimal cleanup. A scatter of fresh cilantro and a squeeze of lime over the top pulls everything together into something that looks as good as it tastes. It also happens to be fully Whole30-compliant, so it works hard for a lot of different goals all at once.

Heat 1 tbsp of the avocado oil in a large (12-inch) cast iron skillet over medium-high heat until shimmering. Add the plantain cubes in a single layer and cook undisturbed for 3–4 minutes, until the undersides are deep golden brown. Flip and cook for another 2–3 minutes until golden on the second side. Transfer the plantains to a plate and set aside.
Reduce the heat to medium and add the remaining 1 tbsp avocado oil to the same skillet. Add the onion and bell pepper and cook, stirring occasionally, until softened and the onion is translucent, about 5–6 minutes.
