Smoky, vibrant, and deeply satisfying, this breakfast hash brings together caramelized plantains, spiced vegetables, and perfectly fried eggs in a single cast iron skillet. The plantains get a proper sear until deeply golden, soaking up the warmth of smoked paprika, cumin, and a touch of cayenne before being folded back into a tangle of wilted kale, sweet bell pepper, and onion. Every ingredient here is a whole, recognizable food — avocado oil, fresh garlic, lime juice — so there's no need to scan labels for hidden additives or synthetic stabilizers that so often sneak into packaged breakfast options. That clean ingredient list is exactly what makes this hash work for anyone avoiding emulsifiers, since nothing here relies on processed shortcuts to hold it together. A squeeze of fresh lime at the end cuts through the richness and ties everything together with a bright, citrusy finish. Top it with as many eggs as your crowd demands and scatter over some cilantro for a little freshness. It's the kind of breakfast that feels indulgent but is built entirely from real, whole ingredients you can feel good about.

Heat 1 tbsp of the avocado oil in a large (12-inch) cast iron skillet over medium-high heat until shimmering. Add the plantain cubes in a single layer and cook undisturbed for 3–4 minutes, until the undersides are deep golden brown. Flip and cook for another 2–3 minutes until golden on the second side. Transfer the plantains to a plate and set aside.
Reduce the heat to medium and add the remaining 1 tbsp avocado oil to the same skillet. Add the onion and bell pepper and cook, stirring occasionally, until softened and the onion is translucent, about 5–6 minutes.
