Smoky, colorful, and deeply satisfying, this cast iron breakfast hash is the kind of morning meal that makes you genuinely excited to get out of bed. Caramelized plantain cubes bring a subtle natural sweetness that plays beautifully against smoked paprika, cumin, and a kick of cayenne — no sweeteners needed, because the ingredients do all the heavy lifting on their own. The combination of wilted lacinato kale, charred bell pepper, and spiced onion makes this feel like a complete, nourishing plate rather than a side dish that needs something extra. A bright hit of fresh lime juice ties everything together and keeps the flavors lively and bold. Eggs cooked right in the same skillet mean fewer dishes and a cohesive finish, with runny or fully set yolks both working beautifully depending on your mood. This is the kind of recipe that proves eating without added sugar doesn't mean eating without joy — every bite is layered, warming, and genuinely craveable.

Heat 1 tbsp of the avocado oil in a large (12-inch) cast iron skillet over medium-high heat until shimmering. Add the plantain cubes in a single layer and cook undisturbed for 3–4 minutes, until the undersides are deep golden brown. Flip and cook for another 2–3 minutes until golden on the second side. Transfer the plantains to a plate and set aside.
Reduce the heat to medium and add the remaining 1 tbsp avocado oil to the same skillet. Add the onion and bell pepper and cook, stirring occasionally, until softened and the onion is translucent, about 5–6 minutes.
