Bright, tangy, and loaded with fresh vegetables, this scrambled egg dish is the kind of breakfast that actually keeps you full and excited to eat clean. The salsa verde is made entirely from scratch — tomatillos, jalapeño, cilantro, and fresh lime juice blended into a punchy, slightly chunky sauce that puts any bottled version to shame. No mystery additives, no color enhancers, no "natural flavors" that aren't actually natural — just real ingredients you can see and taste. Ghee brings a rich, nutty base to the eggs, while red bell pepper, zucchini, and baby spinach add color and substance to every forkful. The low-and-slow fold technique keeps the eggs soft and custardy rather than rubbery, which makes a bigger difference than you'd expect. A few slices of avocado on top round everything out into a plate that looks as good as it tastes. Whether you're deep into a Whole30 reset or just trying to eat more intentionally, this one earns a permanent spot in the breakfast rotation.
