Smoky, tangy, and loaded with color, this skillet hash is the kind of one-pan meal that earns a permanent spot in your weekend rotation. The salsa verde is made entirely from scratch — tomatillos, jalapeño, garlic, cilantro, and fresh lime juice — so you're never relying on jarred sauces or processed condiments that often sneak in synthetic preservatives like BHA and BHT. Every ingredient here is whole and recognizable, which makes it a genuinely clean option without any compromise on bold flavor. Crispy Yukon Gold potatoes get a deep golden crust in the cast iron before being tossed with charred bell pepper, zucchini, and warm spices, then blanketed in that bright, blended salsa. Hot-smoked salmon brings a rich, savory depth that makes this feel far more indulgent than it actually is. Finished with sliced avocado, fresh cilantro, and a squeeze of lime, it's the kind of dish that looks impressive straight from the skillet and tastes even better than it looks.

Make the salsa verde: Place the tomatillos, jalapeño, and unpeeled garlic cloves in a medium saucepan and cover with water. Bring to a boil over medium-high heat, then reduce to a steady simmer and cook for 8–10 minutes, until the tomatillos are fully softened and have turned from bright green to olive-drab.

Drain the tomatillos and jalapeño. Peel the garlic cloves. Transfer everything to a blender along with the cilantro, lime juice, and 1/2 tsp kosher salt. Blend until smooth, about 30 seconds. Taste and adjust salt. Set aside.
