This vibrant breakfast plate brings together seared salmon, creamy avocado, a runny fried egg, and a bright homemade salsa verde that you'll want to put on absolutely everything. The salsa starts with boiled tomatillos and jalapeño blended with scallion greens, cilantro, and lime juice — tangy, a little smoky, and completely made from scratch with zero mystery ingredients. Salmon fillets get a quick cumin-spiced sear in avocado oil until the skin is golden and the flesh is just cooked through, which keeps every bite tender and rich. Layered over sliced ripe avocado and finished with a fried egg, the whole plate hits that satisfying combination of healthy fat, protein, and bold flavor that makes you feel genuinely good about breakfast. Because every component is built from whole, recognizable ingredients, there's no need to scan labels or second-guess what's in your food — it's all right there in the pan. This is the kind of morning meal that feels like something you'd order at a trendy brunch spot, except you made it at home in about twenty minutes.

Place the tomatillos and jalapeño in a medium saucepan and cover with water. Bring to a boil over medium-high heat, then reduce to a simmer and cook for 8–10 minutes, until the tomatillos are olive-green, softened, and just beginning to split.
Drain the tomatillos and jalapeño and transfer to a blender or food processor. Add the scallion greens, cilantro, lime juice, and 1/4 tsp salt. Blend until smooth but still slightly textured, about 20–30 seconds. Taste and adjust salt. Set aside.
