Bright, tangy, and deeply satisfying, this breakfast plate layers seared salmon, creamy avocado, and a vivid homemade salsa verde into something that feels far more special than your average morning meal. The salsa verde is the real star here — boiled tomatillos and jalapeño blended with fresh cilantro, scallion greens, and lime juice create a punchy, verdant sauce that ties every component together. Because everything is made from scratch using whole, recognizable ingredients, you never have to second-guess what's actually on your plate — no cured meats, no packaged sauces, no hidden preservatives lurking in the background. Salmon seasoned with cumin, salt, and pepper gets a hard sear in avocado oil until the skin is golden and the flesh is just cooked through, delivering that satisfying crisp-edged bite. A fried egg on top adds richness and rounds out the plate into a genuinely complete, protein-forward breakfast. It's the kind of meal that looks impressive enough for a weekend brunch but comes together in a single skillet with minimal cleanup. Squeeze a little extra lime over everything right before eating — it makes the whole plate sing.

Place the tomatillos and jalapeño in a medium saucepan and cover with water. Bring to a boil over medium-high heat, then reduce to a simmer and cook for 8–10 minutes, until the tomatillos are olive-green, softened, and just beginning to split.
Drain the tomatillos and jalapeño and transfer to a blender or food processor. Add the scallion greens, cilantro, lime juice, and 1/4 tsp salt. Blend until smooth but still slightly textured, about 20–30 seconds. Taste and adjust salt. Set aside.
