Bright, tangy, and deeply satisfying, this breakfast plate is built entirely from whole, unprocessed ingredients — which means every element on the plate is exactly what it looks like. Store-bought salsas and seasoning blends are notorious for sneaking in synthetic dyes and artificial additives, but here the vivid green color comes purely from simmered tomatillos, fresh jalapeño, cilantro, and a squeeze of lime. The salsa verde is blended right in your own kitchen, so there's zero guesswork about what's in it. Cumin-seasoned salmon gets a hard sear in avocado oil until the skin is golden and the flesh is just cooked through, then it's layered over creamy sliced avocado and crowned with a fried egg. Everything on this plate earns its place — rich healthy fats, clean protein, and a punchy homemade sauce that ties it all together. It's the kind of breakfast that feels indulgent but leaves you feeling genuinely good, which is exactly the point.

Place the tomatillos and jalapeño in a medium saucepan and cover with water. Bring to a boil over medium-high heat, then reduce to a simmer and cook for 8–10 minutes, until the tomatillos are olive-green, softened, and just beginning to split.
Drain the tomatillos and jalapeño and transfer to a blender or food processor. Add the scallion greens, cilantro, lime juice, and 1/4 tsp salt. Blend until smooth but still slightly textured, about 20–30 seconds. Taste and adjust salt. Set aside.
