Bright, tangy, and deeply satisfying, this breakfast plate is the kind of morning meal that makes you forget you're eating clean. The salsa verde is made entirely from scratch — boiled tomatillos, fresh jalapeño, scallion greens, cilantro, and lime juice blended into a vibrant sauce with zero mystery ingredients. That matters more than it sounds, because store-bought salsas and hot sauces are notorious for sneaking in natural and artificial flavors that have no business being in a simple green sauce. Here, every component is exactly what it looks like: real food, real flavor. The salmon gets a quick sear with avocado oil and a cumin-forward seasoning that builds a gorgeous golden crust, while creamy avocado and a fried egg round out the plate with richness and staying power. It's a restaurant-worthy breakfast that comes together in one skillet, with no label-reading required.

Place the tomatillos and jalapeño in a medium saucepan and cover with water. Bring to a boil over medium-high heat, then reduce to a simmer and cook for 8–10 minutes, until the tomatillos are olive-green, softened, and just beginning to split.
Drain the tomatillos and jalapeño and transfer to a blender or food processor. Add the scallion greens, cilantro, lime juice, and 1/4 tsp salt. Blend until smooth but still slightly textured, about 20–30 seconds. Taste and adjust salt. Set aside.
