Breakfast hashes are one of those meals that feel indulgent but are actually built on nothing but real, whole ingredients — and this one delivers big on both flavor and satisfaction. Green plantains and sweet potato get pan-fried in avocado oil until caramelized and golden, then tossed with sautéed onion, red bell pepper, cumin, and smoked paprika for a smoky, slightly sweet base that's genuinely hard to stop eating. The homemade salsa verde — charred tomatillos, jalapeño, garlic, cilantro, and fresh lime juice blended into a bright, tangy sauce — ties everything together in a way that no jarred condiment ever could. Because every component is made from scratch with simple produce, proteins, and spices, there's nothing hidden to worry about: no fermented additives, no questionable preservatives, just clean ingredients doing all the heavy lifting. Fried eggs go right on top, and a few slices of creamy avocado round out the plate into a genuinely complete morning meal. It's the kind of breakfast that makes you feel like you actually have your life together, even on a weekday.

Make the salsa verde: Place the tomatillos, jalapeño, and unpeeled garlic cloves in a medium saucepan and cover with water. Bring to a boil over medium-high heat, then reduce to a simmer and cook for 8–10 minutes, until the tomatillos are soft and have turned from bright green to olive-drab.
Drain the tomatillos and jalapeño. Peel the garlic cloves. Transfer everything to a blender along with the cilantro, lime juice, and 1/4 tsp salt. Blend until smooth, about 30 seconds. Taste and adjust salt. Set aside.
