Breakfast hash doesn't get much more satisfying than this — caramelized green plantains and golden sweet potato cubes come together with sautéed onion and red bell pepper, all seasoned with cumin and smoked paprika for a deeply savory, slightly smoky base. The real showstopper is the homemade salsa verde, built from simmered tomatillos, jalapeño, and roasted garlic, then blended with fresh cilantro and lime juice into a bright, tangy sauce that cuts right through the richness of the hash. Fried eggs go on top, and suddenly you have a full, hearty meal that feels like something you'd order at a great brunch spot. Every ingredient here is naturally free from lupin — no legume flours, no hidden fillers, just whole vegetables, eggs, and avocado oil doing all the heavy lifting. Green plantains are the secret weapon: they hold their shape beautifully in the skillet and develop a slightly caramelized crust that pairs perfectly with the soft sweet potato. This is the kind of breakfast that keeps you full for hours without any compromise on flavor, and the salsa verde alone is worth making by the jarful.
