Bright, tangy, and deeply satisfying, this plantain breakfast hash is the kind of morning meal that makes you want to get out of bed. Green plantains and sweet potato get pan-roasted in avocado oil until caramelized and golden, then tossed with sautéed onion, red bell pepper, cumin, and smoked paprika for a smoky, slightly sweet base that's genuinely hard to stop eating. The homemade salsa verde — built from simmered tomatillos, jalapeño, garlic, cilantro, and fresh lime juice — comes together in a blender and adds a bright, punchy finish that ties everything together. Fried eggs go right on top, making this a complete, protein-packed plate without a single processed ingredient in sight. Everything here is naturally free from poultry, so there's no substituting or swapping required — just whole, clean ingredients doing exactly what they're supposed to do. Sliced avocado and extra cilantro on the side take it over the top, though the hash honestly holds its own without them. Whether you're deep into a Whole30 reset or just chasing a better weekend breakfast, this one earns a permanent spot in the rotation.
