Bright, tangy, and deeply satisfying, this plantain breakfast hash is the kind of morning meal that makes you genuinely excited to get out of bed. Green plantains and sweet potato get pan-fried in avocado oil until golden and slightly caramelized, then tossed with sautéed onion, red bell pepper, cumin, and smoked paprika for a skillet full of bold, layered flavor. The homemade salsa verde — built from simmered tomatillos, jalapeño, garlic, cilantro, and fresh lime juice — comes together in a blender and adds a bright, punchy finish that ties everything together. Fried eggs go right on top, making this a complete, protein-packed plate without any need for coffee or a caffeine boost to feel energized. Every single ingredient here is naturally free of stimulants, so you're not navigating labels or swapping anything out — it just works as written. Sliced avocado and extra cilantro on top take it from weekday-solid to genuinely impressive, whether you're cooking for yourself or feeding a crowd.
