Breakfast hash is one of those dishes that sounds humble but absolutely delivers when it's done right, and this one is a serious crowd-pleaser. Crispy-edged sweet potatoes, two kinds of bell pepper, and shredded chicken all come together in a cast iron skillet before getting tossed in a tangy tomatillo salsa verde — it's colorful, hearty, and deeply satisfying. A homemade ranch-style seasoning blend of dill, parsley, smoked paprika, and garlic powder ties everything together in a way that store-bought packets simply can't, and without any of the off-limits additives that make packaged seasonings a minefield during a reset. The whole thing gets finished with fried eggs right in the same skillet, so cleanup is minimal and the yolks do that gorgeous runny thing over the warm hash. Sliced avocado, fresh cilantro, and a squeeze of lime on top take it from weekday fuel to something you'd genuinely look forward to waking up for. It serves four, which makes it perfect for a weekend family breakfast or meal-prepping the hash base ahead and frying eggs fresh each morning.

In a small bowl, combine the dried dill, dried parsley, garlic powder, onion powder, smoked paprika, black pepper, and 1/2 tsp of the salt. Stir to mix and set aside.
Heat 1 1/2 tbsp of the avocado oil in a 12-inch cast iron skillet over medium-high heat until shimmering. Add the diced sweet potatoes in a single layer and season with the remaining 1/4 tsp salt. Cook undisturbed for 4–5 minutes until the undersides are golden and beginning to crisp, then stir and continue cooking for another 5–6 minutes, stirring occasionally, until the sweet potatoes are tender when pierced with a fork and browned on most sides.
