Heat 1 tbsp avocado oil in a large (12-inch) cast iron skillet over medium-high heat until shimmering. Add the diced sweet potatoes in a single layer, season with ½ tsp salt and ¼ tsp black pepper, and cook undisturbed for 4–5 minutes until the undersides are golden and beginning to crisp. Stir and continue cooking for another 4–5 minutes, stirring occasionally, until the sweet potatoes are tender when pierced with a fork and browned on most sides. Transfer to a plate and set aside.
Reduce the heat to medium. Add the remaining 1 tbsp avocado oil to the same skillet. Add the diced red bell pepper and cook, stirring occasionally, until softened and lightly charred at the edges, about 4–5 minutes. Add the minced garlic, smoked paprika, and cumin and cook, stirring constantly, until fragrant, about 1 minute — watch closely so the garlic does not burn.
