This festive spritzer is proof that a truly stunning drink doesn't need anything fancy — just real fruit, a little citrus, and some good sparkling water. The secret is a quick homemade cranberry-date concentrate, where fresh or frozen cranberries are simmered with Medjool dates until everything is soft and jammy, then strained into a rich, ruby-red syrup. That concentrate gets stirred together with 100% pomegranate juice and fresh lime juice for a tart, lightly sweet base that tastes far more complex than the short ingredient list suggests. Topped off with chilled sparkling water, it's bubbly and refreshing without any added sugar or artificial sweeteners — the dates do all the natural sweetening work. It's the kind of drink that looks gorgeous on a table, especially with a few pomegranate arils and a sprig of mint floating on top. Whether you're hosting a crowd or just want something special on a weeknight, this one comes together with minimal effort and zero compromise.

Combine the cranberries, water, and pitted dates in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries burst and the dates are completely soft, about 8–10 minutes.
Remove from heat and press the mixture through a fine-mesh strainer into a measuring cup or bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about ½ cup of cranberry-date concentrate.
