This sparkling drink is the kind of thing that makes a mocktail feel genuinely special — tart, jewel-toned, and refreshing in a way that punches well above its ingredient list. The secret is a quick homemade cranberry-date concentrate, where fresh or frozen cranberries and Medjool dates are simmered together until soft, then pressed through a strainer to yield a rich, naturally sweet syrup with zero added sugar. That concentrate gets stirred together with 100% pomegranate juice and fresh lime juice before being topped off with chilled sparkling water, so every sip has real depth and brightness. Since everything here is whole, unprocessed fruit and water, there's nothing to second-guess on a label — no mystery additives, no sneaky sweeteners, just clean ingredients doing all the work. It's a genuinely elegant option for holiday tables, weekend brunches, or any moment when you want something festive that everyone at the table can enjoy. A handful of pomegranate arils and a sprig of fresh mint on top make it look like you put in far more effort than you actually did.

Combine the cranberries, water, and pitted dates in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries burst and the dates are completely soft, about 8–10 minutes.
Remove from heat and press the mixture through a fine-mesh strainer into a measuring cup or bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about ½ cup of cranberry-date concentrate.
