This festive spritzer is proof that a stunning, celebration-worthy drink doesn't need anything artificial to taste incredible. A homemade cranberry-date concentrate forms the backbone here — fresh or frozen cranberries are simmered with Medjool dates until soft and jammy, then strained into a silky, naturally sweet syrup that puts store-bought mixers to shame. Combined with 100% pomegranate juice and a bright squeeze of fresh lime, the result is tart, fruity, and deeply satisfying without a drop of refined sugar or anything processed. Every single ingredient is exactly what it says it is, which makes this a genuinely clean option when you want something special in your glass. Top it off with chilled sparkling water, a handful of ice, and a few pomegranate arils for a drink that looks like it came from a fancy cocktail bar. It's the kind of thing you'll want to batch up for brunches, holiday tables, or any moment that calls for something a little more festive than plain water.

Combine the cranberries, water, and pitted dates in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries burst and the dates are completely soft, about 8–10 minutes.
Remove from heat and press the mixture through a fine-mesh strainer into a measuring cup or bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about ½ cup of cranberry-date concentrate.
