This festive spritzer is proof that a stunning, celebration-worthy drink doesn't need anything fancy — just real fruit, a little patience at the stove, and some good sparkling water. The heart of it is a homemade cranberry-date concentrate, where fresh or frozen cranberries are simmered with Medjool dates until everything is soft and jammy, then pressed through a strainer to capture a deeply flavored, naturally sweet syrup. That concentrate gets stirred together with 100% pomegranate juice and a bright squeeze of fresh lime, creating a base that's tart, rich, and just a little earthy in the best way. Topped with chilled sparkling water over ice, it turns into something effervescent and gorgeous — especially with a few pomegranate arils and a sprig of mint floating on top. Every single ingredient here is clean and whole-food, so there's no label-reading required and no mystery additives sneaking in. It works beautifully as a mocktail for a dinner party, a holiday table, or honestly just a Tuesday when you want something that feels a little special.

Combine the cranberries, water, and pitted dates in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries burst and the dates are completely soft, about 8–10 minutes.
Remove from heat and press the mixture through a fine-mesh strainer into a measuring cup or bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about ½ cup of cranberry-date concentrate.
