This sparkling drink is the kind of thing that makes a mocktail feel genuinely special — tart, jewel-toned, and refreshing in a way that store-bought fizzy drinks rarely manage. The secret is a quick homemade cranberry-date concentrate, where fresh or frozen cranberries are simmered with Medjool dates until soft and bursting, then strained into a rich, naturally sweet syrup. That concentrate gets stirred together with 100% pomegranate juice and fresh lime juice before being topped off with chilled sparkling water, so every sip has real depth and brightness. Because every ingredient here is whole and unprocessed, you sidestep the synthetic additives and preservatives that show up in so many bottled beverages and flavored sparkling waters. The dates do the sweetening naturally, which means no refined sugar and nothing artificial hiding in the mix. Garnished with fresh mint and a handful of pomegranate arils, it looks stunning in a glass and feels festive enough for a holiday table or a weekend brunch. It's the kind of drink that makes everyone at the table ask for the recipe.

Combine the cranberries, water, and pitted dates in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries burst and the dates are completely soft, about 8–10 minutes.
Remove from heat and press the mixture through a fine-mesh strainer into a measuring cup or bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about ½ cup of cranberry-date concentrate.
