Tart cranberries, sweet Medjool dates, and bold pomegranate juice come together in a sparkling drink that feels genuinely festive without a drop of alcohol or anything artificial. The cranberry-date concentrate is the real star here — simmering the fruit and dates together coaxes out a deep, jammy sweetness that no store-bought syrup can match. A squeeze of fresh lime keeps everything bright and balanced, while the chilled sparkling water gives it that satisfying fizz. Because every ingredient is whole and unprocessed, you never have to squint at a label wondering what's hiding in a flavoring or preservative blend. Many bottled juices and cocktail mixers sneak in additives you'd rather avoid, so making the concentrate from scratch puts you completely in control. Serve it over ice with a few pomegranate arils and a sprig of mint and it looks stunning enough for a holiday table or a casual weekend brunch.

Combine the cranberries, water, and pitted dates in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries burst and the dates are completely soft, about 8–10 minutes.
Remove from heat and press the mixture through a fine-mesh strainer into a measuring cup or bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about ½ cup of cranberry-date concentrate.
