This festive spritzer is proof that a truly stunning drink doesn't need anything fancy — just real fruit, a little citrus, and some bubbles. A homemade cranberry-date concentrate forms the heart of the recipe, simmered until the cranberries burst and the dates melt into a naturally sweet, ruby-red syrup. That concentrate gets stirred together with 100% pomegranate juice and fresh lime juice before being topped off with chilled sparkling water for a drink that's bright, tart, and just a little celebratory. Since every ingredient here is whole and unprocessed, you never have to second-guess a label or wonder what's hiding in a store-bought mixer. The pomegranate arils and fresh mint garnish make it look like something you'd order at a nice restaurant, but it comes together in your own kitchen with minimal effort. It's the kind of drink that works equally well at a holiday table or a random Tuesday when you just want something that feels a little special.

Combine the cranberries, water, and pitted dates in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries burst and the dates are completely soft, about 8–10 minutes.
Remove from heat and press the mixture through a fine-mesh strainer into a measuring cup or bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about ½ cup of cranberry-date concentrate.
