This festive spritzer is proof that a stunning, celebration-worthy drink doesn't need anything artificial to taste incredible. A homemade cranberry-date concentrate forms the backbone here — fresh or frozen cranberries are simmered with pitted Medjool dates until everything is soft and jammy, then strained into a rich, naturally sweet syrup that's completely free of additives or flavor enhancers. Combined with 100% pomegranate juice and a bright squeeze of fresh lime, the result is tart, fruity, and deeply satisfying in a way that store-bought mixers rarely manage. Topping it all off with chilled sparkling water gives you that satisfying fizz without any of the questionable ingredients hiding in flavored sodas or cocktail mixes. The deep ruby color alone makes it look like something you'd order at a fancy restaurant, especially when garnished with fresh mint and a scatter of pomegranate arils. It's an effortless crowd-pleaser for holidays, brunches, or any time you want something special that everyone at the table can actually enjoy.

Combine the cranberries, water, and pitted dates in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries burst and the dates are completely soft, about 8–10 minutes.
Remove from heat and press the mixture through a fine-mesh strainer into a measuring cup or bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about ½ cup of cranberry-date concentrate.
