This sparkling drink is the kind of thing that makes a mocktail feel genuinely special — tart, jewel-toned, and refreshing in a way that punches well above its ingredient list. The secret is a quick homemade cranberry-date concentrate, where fresh or frozen cranberries are simmered with Medjool dates until soft, then pressed through a strainer to create a naturally sweet, deeply flavored base. No refined sugar, no artificial anything — just real fruit doing all the heavy lifting. That concentrate gets stirred together with 100% pomegranate juice and a bright hit of fresh lime before being topped off with chilled sparkling water for the fizz factor. The result is a layered, complex flavor that feels festive enough for a dinner party but easy enough for a Tuesday night. Garnish with pomegranate arils and a sprig of fresh mint and it looks almost too pretty to drink — almost.

Combine the cranberries, water, and pitted dates in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries burst and the dates are completely soft, about 8–10 minutes.
Remove from heat and press the mixture through a fine-mesh strainer into a measuring cup or bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about ½ cup of cranberry-date concentrate.
