This festive spritzer is proof that a stunning, celebration-worthy drink doesn't need anything fancy or processed to taste incredible. A homemade cranberry-date concentrate forms the heart of the recipe — simmered until the cranberries burst and the Medjool dates melt into a naturally sweet, ruby-red syrup that gets strained into a silky concentrate. Combined with 100% pomegranate juice and a bright hit of fresh lime, the flavor is tart, fruity, and deeply refreshing in a way that store-bought mixers simply can't match. Topping it all off with chilled sparkling water gives it that satisfying fizz without any added sugars, artificial flavors, or ingredients that could trip up a Whole30 round. Since every component here is whole food and plant-based in the cleanest sense, there's nothing hidden to second-guess — just real fruit doing all the heavy lifting. Serve it over ice with a few pomegranate arils and a sprig of fresh mint, and it looks gorgeous enough to bring to any gathering without anyone suspecting it's anything other than indulgent.

Combine the cranberries, water, and pitted dates in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries burst and the dates are completely soft, about 8–10 minutes.
Remove from heat and press the mixture through a fine-mesh strainer into a measuring cup or bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about ½ cup of cranberry-date concentrate.
