This festive sparkling drink is proof that a gorgeous, celebration-worthy beverage doesn't need a drop of added sweetener to taste incredible. The secret is a homemade cranberry-date concentrate — simmered until the cranberries burst and the Medjool dates melt into a naturally sweet, ruby-red syrup that you strain into pure liquid gold. Combined with 100% pomegranate juice and a bright hit of fresh lime, the result is tart, fruity, and deeply refreshing in a way that store-bought mixers and sodas simply can't match. Most bottled juices and flavored sparkling drinks sneak in high fructose corn syrup or other sweeteners, so making your own concentrate from whole fruit and dates puts you completely in control of what's in your glass. Topped with chilled sparkling water and garnished with pomegranate arils and fresh mint, it looks stunning on any table — holiday spread or Tuesday night alike. It's the kind of drink that makes guests ask for the recipe before they've even finished their first sip.

Combine the cranberries, water, and pitted dates in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries burst and the dates are completely soft, about 8–10 minutes.
Remove from heat and press the mixture through a fine-mesh strainer into a measuring cup or bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about ½ cup of cranberry-date concentrate.
