This festive spritzer is proof that a gorgeous, celebratory drink doesn't need refined sugar or artificial anything to taste absolutely spectacular. The secret is a homemade cranberry-date concentrate — simmered until the cranberries burst and the Medjool dates melt into a naturally sweet, deeply flavored syrup — which means every sip is sweetened the way your gut actually appreciates. Combined with 100% pomegranate juice and a bright hit of fresh lime, the flavor is tart, fruity, and refreshing in a way that feels genuinely indulgent. Topping it all off with chilled sparkling water gives you that satisfying fizz without any of the sketchy additives hiding in store-bought sodas or mixers. It's the kind of drink you can pour for a crowd — whether they're following a specific protocol or not — and nobody will feel like they're missing out. A handful of pomegranate arils and a sprig of fresh mint make it look stunning in the glass, which is always a bonus.

Combine the cranberries, water, and pitted dates in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries burst and the dates are completely soft, about 8–10 minutes.
Remove from heat and press the mixture through a fine-mesh strainer into a measuring cup or bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about ½ cup of cranberry-date concentrate.
