Tart cranberries, rich pomegranate, and a bright squeeze of lime come together in a sparkling drink that feels genuinely festive without a drop of alcohol or added sugar. The secret is a quick homemade cranberry-date concentrate — just cranberries, water, and Medjool dates simmered until soft, then pressed through a strainer to capture all that deep, jewel-toned flavor. Dates do the heavy lifting as a natural sweetener, which means no refined sugars or high-fructose syrups sneaking in through the back door. That matters a lot when you're managing fructose intake, since most store-bought sparkling drinks and juice blends are loaded with concentrated sweeteners that can cause real discomfort. Here, every ingredient is whole and intentional — pomegranate juice, fresh lime, and chilled sparkling water round out the concentrate into something that looks stunning in a glass. A handful of ice, a sprig of mint, and a scatter of pomegranate arils turn it into the kind of drink you'd proudly serve at a dinner party. It's refreshing, layered, and proof that a thoughtfully built mocktail doesn't need shortcuts to taste special.

Combine the cranberries, water, and pitted dates in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries burst and the dates are completely soft, about 8–10 minutes.
Remove from heat and press the mixture through a fine-mesh strainer into a measuring cup or bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about ½ cup of cranberry-date concentrate.
