This sparkling drink is the kind of thing that makes a mocktail feel genuinely special — tart, jewel-toned, and layered with real fruit flavor from start to finish. The secret is a quick homemade cranberry-date concentrate, where fresh or frozen cranberries are simmered with Medjool dates until everything is soft and jammy, then pressed through a strainer to capture a rich, naturally sweet syrup. That concentrate gets stirred together with 100% pomegranate juice and a bright hit of fresh lime, so every sip has serious depth without a drop of added sugar. Topped with chilled sparkling water and served over ice, it's fizzy and refreshing in a way that feels celebratory without trying too hard. Garnish with pomegranate arils and a sprig of fresh mint and it looks stunning on a holiday table or a weekend brunch spread. Because everything here is built from whole fruits and simple pantry staples, there's zero guesswork about what's actually in your glass — no hidden additives, no label anxiety, just clean ingredients doing all the work.

Combine the cranberries, water, and pitted dates in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries burst and the dates are completely soft, about 8–10 minutes.
Remove from heat and press the mixture through a fine-mesh strainer into a measuring cup or bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about ½ cup of cranberry-date concentrate.
