This vibrant, jewel-toned spritzer is the kind of drink that makes any occasion feel a little more special — and it comes together with nothing but whole, recognizable ingredients. Commercially made sparkling beverages are notorious for sneaking in stabilizers, sweeteners, and emulsifiers that have no business being in your glass, so making your own is genuinely the smarter move. Here, a homemade cranberry-date concentrate does all the heavy lifting: fresh or frozen cranberries and soft Medjool dates are simmered together and strained into a naturally sweet, deeply flavored base. Pomegranate juice and a bright squeeze of fresh lime round everything out before chilled sparkling water turns it into something effervescent and refreshing. The result is tart, lightly sweet, and beautifully complex without a single additive in sight. Pile the glasses high with ice, drop in a few pomegranate arils and a sprig of mint, and you have a drink that looks like it came from a fancy cocktail bar — no compromises required.

Combine the cranberries, water, and pitted dates in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries burst and the dates are completely soft, about 8–10 minutes.
Remove from heat and press the mixture through a fine-mesh strainer into a measuring cup or bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about ½ cup of cranberry-date concentrate.
