This festive spritzer is the kind of drink that makes a regular Tuesday feel like a celebration. Real cranberries and Medjool dates are simmered down into a rich, naturally sweet concentrate that gives the whole thing a depth you simply won't find in a store-bought mixer. Pomegranate juice and a bright squeeze of fresh lime round everything out before sparkling water brings the fizz — no added sugars, no artificial anything, just clean and vibrant flavor. It's completely free of eggs and every other animal product, so it works for a wide range of guests without any fuss. The garnish of fresh mint and jewel-like pomegranate arils makes it look genuinely stunning in the glass, which means it pulls double duty as a showstopper mocktail for holiday tables or weekend brunches. Make the concentrate ahead of time and keep it chilled, and you can pour these together in minutes when company arrives.

Combine the cranberries, water, and pitted dates in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries burst and the dates are completely soft, about 8–10 minutes.
Remove from heat and press the mixture through a fine-mesh strainer into a measuring cup or bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about ½ cup of cranberry-date concentrate.
